With a luxurious and contemporary design inspired by the romance of travel in the 1930’s, Notch8 Restaurant & Bar brings a new era of glamour to the lobby of Fairmont Hotel Vancouver. Named after a train’s top speed, achieved only by the most skilled conductors, the restaurant pays homage to the hotel’s storied history and legacy as a luxury hotel along the Canadian Pacific railway.
Notch8 features West Coast cuisine, with many dishes designed around items featured on archived menus from the hotel’s early days. Chef Jason Saruya has kept the fundamentals of those classic dishes, while modernizing them to suit today’s discerning palates. Sommelier and restaurant GM Philippe Grandbois has curated an extensive wine list with offerings from around the world and recommendations for best pairings.
