With over 20 years of experience in a variety of kitchen environments, Tyler Ugoccioni has worked at some of Vancouver’s top hotels, including Fairmont Waterfront as their Sous Chef and Shangri-La Hotel Vancouver. As Chef de Cuisine at Fairmont Hotel Vancouver, he brings his technical strengths, leadership, and a deep commitment to developing the next generation of culinary talent.
Driven by collaboration and lifelong learning, Tyler thrives in fast-paced environments and is inspired by chefs, farmers, and purveyors who share his passion for food. With a background in engineering, he brings a unique edge to the kitchen, excelling in systems, numbers, and organization.
Outside of work, he enjoys hiking, snowboarding, travelling, reading, and photography. His favourite cuisine to prepare is Italian, especially pasta, for its balance of simplicity and craft, while his go-to meal is Japanese, with a love for the creativity and precision behind sushi and ramen.
