Our Story

A new chapter unfolds at Notch8 Restaurant & Bar, with the launch of refreshed menus across breakfast, lunch, dinner, and Sunday brunch. Led by Executive Chef, Mike Reid, the updated culinary program blends classic French technique with Pacific Northwest ingredients, honouring the restaurant’s heritage while embracing a contemporary West Coast perspective. From refined classics to regionally inspired dishes and shareable plates, complemented by era-inspired cocktails and the immersive “À Toi!” tasting menu, the experience reflects a balance of tradition and innovation rooted in the spirit of grand hospitality.

Afternoon Tea

Embark on a culinary journey inspired by celebrated BC artist, Emily Carr, with a special themed Afternoon Tea, Among the Trees, at Fairmont Hotel Vancouver. In collaboration with the Vancouver Art Gallery and available throughout the summer, guests can savour delectable treats and artistic creations in Notch8’s tea salon, transformed into an immersive experience with Carr’s artwork and forest-themed decor.

Available for dine-in or take out, our Emily Carr Tea experience runs May 22 - Sept 20, 2026.
